Our client is looking for an outstanding Live In House Couple to manage an Estate in Scotland.
They are looking for a couple who can make up a team of Front of House Manager and Chef.
The Chef
Working at the estate, a top-quality family style cuisine is offered to international guests. Group sizes can vary from couples to 28 guests as well as several larger events throughout the year.
The role involves running the kitchen, planning and organising purchases, costings for bookings, serving a wide range of dishes from vegan to home grown venison, kitchen P&L as well as developing the cottage catering service offering. You will also need to have an open mind and a passion for local and home grown produce.
2019 will see the build of an aquaponics vegetable garden with several greenhouses. The aim is to produce as many vegetables and as much fish as needed for our reserve and, potentially, for local supply. You will be a driving force in developing this unique and amazing offer as part of the reserve activities, including the development of foraging & cooking courses around the aquaponic theme.
We would like our chef to be happy to interact with our guests, happily talk about the food they are enjoying and the ethos.
Front of house
Our style of service is ‘being available, but not intrusive’. We would like to include in our team a Front of House person who is able to welcome and comfortably host a wide range of people; from easy going nature lovers to wealthy and demanding individuals. Our front of house person should be equally comfortable with people from all walks of life.
The role includes building good rapport with our guests, solving day to day problems and being able to accommodate all their requests including proactively seeking to enhance their stay.
In addition, you will be the right-hand person to our Operations Manager and take responsibility when he is away. This will include answering phone queries for bookings, planning and diarising stays, invoicing and managing household purchases.
We are looking for someone who can help the team take our hospitality to the next level.
The couple
Between them, the couple should be able to operate the hospitality side of the reserve on their own when the Hospitality Manager is away and work closely with the reserve and the housekeeping teams.
We look for business acumen and awareness, good communication skills, energy, attention to detail, passion for food and all things hospitality, understanding of service levels and styles, flair for nature and ambition to achieve the highest levels of service possible.
